At the moment. we are using a lot of Fair Trade East Timor coffee. It's a fantastic coffee and it supports the rebuilding of East Timor's coffee industry".

"All our coffee is roasted in small batches in the roaster you see in these pictures. It's all manually operated and roasts using gas flame. This allows for fine control over the degree of roasting.

My approach to the roasting is totally hands-on and I roast only small batches of coffee at a time."
